I’ve been on a baking kick lately and can’t stop making variations of breads, now that I’ve come up with an awesome mix. When you start a gluten-free and grain-free lifestyle, it seems like you will never ever eat bread again. You look longingly at people chowing down on chipotle burritos, apple pie and butter croissants. Seriously, is this it?!
With a few tweaks here and there, I was able to bake the most delicious grain free bread I’ve ever had. It was perfectly firm on the outside and soft in the inside. It didn’t harden when left out overnight. It is perfect for sandwiches and you can adapt the recipe to make banana or even peach cobbler bread.
